Salfit Cooperative launched in 2019 in collaboration with Salfit Municipality, Palestine — founded to open real economic opportunity for people in the district. What began as a handful of members organising around the olive harvest has grown into a network of shops, kitchens, and production lines run by and for the local community. Every project on this page — the shop, the cafeteria, the kitchen, the tomato line, the soap workshop — grew out of that first launch in 2019. It remains the foundation everything else is built on.

Tucked in the heart of Salfit, the Farmer's Shop is where our members' oil, produce and handmade goods reach customers directly. Cutting out the reseller means farmers keep more of what they earn, and customers get the freshest harvest at a fair price. The shop also carries whatever's new from our other initiatives — the Healthy Kitchen's preserves, the Soap Project's bars — so every member-led project in the cooperative has a shelf here.

The Cafeteria turns our cooperative's harvest into the dishes on the table — olive oil, za'atar, seasonal fruit, and produce grown by our own members. It's a gathering place as much as a kitchen, where the community meets over food rooted in Salfit's land. Running the cafeteria gives our members real, hands-on experience in food service — the kind that's easy to carry into other paid work later on. We also bake fresh pastries to order for events of any size — weddings, henna nights, tawjihi celebrations, graduation parties, birthdays, you name it. Pizza, sfiha, za'atar, hot dog rolls, white and yellow cheese, msakhan rolls, plus a few salads on the side. No beverages — pastries only. Call ahead to reserve yours.

When the harvest is more than the market can absorb fresh, the Healthy Kitchen puts it to work — drying za'atar, pressing oils, and preparing preserves the traditional way, with no shortcuts and no unnecessary additives. Every jar that leaves the kitchen is packaged and labelled by the member who made it — they see it through from the first sprig of thyme to the shelf.

Each summer, our members' tomato fields produce more than can be sold fresh. The Tomato Line was built to capture that surplus — washing, cooking, and packing it into paste and sauce that carries the harvest through the rest of the year. The line runs seasonally, giving local residents paid, hands-on production work exactly when the fields need it most.

Launched in 2021, the Soap Project revives a traditional Nabulsi-style method of soap-making — pure olive oil cured with wild herbs, hand-cut and boxed by our members. It's one of our steadiest earners, and about as direct a line as we've got from the olive harvest to something sitting on a shelf.
